Charlotte Gonzales-Poncet, Head Chef
Charlotte Gonzales-Poncet was raised in central Africa, where her father, who’d previously worked as restaurateur, taught her to cook. Moving to Provence in the South of France at 18, she initially studied psychology before enrolling in hospitality school.
For three years she did summer stages at L’Atelier, Jean-Luc Rabanel’s Michelin two-star restaurant in Arles, and upon graduating she took a junior sous chef role at another of Rabanel’s restaurants, Le Bistrot á Côté.
Charlotte came to Australia in 2012. A job at Merivale’s CBD bistro, Felix, put paid to her travel plans and she has subsequently worked in a number of Merivale kitchens including Coogee Pavilion, The Paddington, Uccello and Fred’s.
As head chef at Song Kitchen, Charlotte’s menu brings together French bistro classics with superb locally sourced produce. Her food is simple, authentic and delicious.
